Panacotta fraises soja recette cookeo
Ingrédients
400 ml de lait de soja
30 g de sucre en poudre
2 g d’agar agar
Le jus d’un citron pressé
150 g de fraises
20 g de crème fraîche liquide
Préparation
Pressez un citron
Dilué avec de l’eau l’agar agar dans un petit récipient
Découpez les fraises en morceaux.
Mode dorer
Versez dans la cuve le lait de soja, le sucre, l’agar agar dilué dans l’eau, le jus du citron pressé.
Portez à ébullition. Quand l’ensemble de la préparation atteint l’ébullition maintenez la pendant 2 mn.
Arrêtez la fonction dorer. Ajoutez la crème fraîche
Déposez les morceaux de fraises dans des ramequins
Versez la préparation dans des ramequins sur les morceaux de fraises. Laissez refroidir à l’air libre puis au frigo au moins 2 h.
Vous pouvez faire un coulis de fraises avec de la confiture de fraises et de l’eau pour la décoration.
